Forks Over Knives (DVD, 2011)

Lee Fulkerson|Theatrical release: 2010 | Rating: PG (MPAA)

Movie synopsis

Documentary filmmaker Lee Fulkerson explores the possibility that so-called "diseases of affluence," such as heart disease, can be reversed by simply adjusting our diets to include less processed and animal-based foods. Back in the 1960s, Cornell University nutritional scientist Dr. T. Colin Campbell was working to find a way to feed the citizens of impoverished Third World nations when a trip to the Philippines forever changed the way he thought about food consumption. There, he discovered that the rates of liver cancer among affluent children who subsisted on diets rich in animal-based foods were notably higher than in children consuming plant-based diets. Meanwhile, surgeon Dr. Caldwell Esselstyn, head of the Breast Cancer Task Force at Cleveland Clinic, was also discovering that many of the diseases he was seeing in patients were practically nonexistent in areas of the world where people were primarily consuming plant foods. Several subsequent investigations by the researchers (who would not meet each other until the 1980s), including a groundbreaking study in China by Dr. Campbell, led them to the revelation that a whole-food, plant-based diet could prevent, and even reverse, such degenerative conditions as type 2 diabetes, heart disease, and some forms of cancer. In this film, Fulkerson examines Dr. Campbell's and Dr. Esselstyn's theories by following the two doctors' individual, yet very similar, story arcs, from their farm-based upbringings to their astounding discoveries. The film also records the experiences of a group of patients suffering from chronic maladies as they participate in an experiment in which their diets are substantially altered and wholesome, plant-based food is, essentially, used as medicine.

Editorial reviews

3 stars out of 4 -- "Here is a film that could save your life....It centers on the work of famed nutritionists Dr. T. Colin Campbell of Cornell and Dr. Caldwell Esselstyn of the Cleveland Clinic."
Chicago Sun-Times - Roger Ebert (05/11/2011)

"[T]his exploration of the health benefits of a 'plant-based diet' is so scrupulously researched and argued that only a fool would ignore its findings."
Entertainment Weekly - Owen Gleiberman (05/13/2011)

"Mr. Fulkerson bites into the global consequences of our food choices and the extent of corporate influence on our official nutrition guidelines....By the time we're introduced to the bright-eyed, bushy-tailed convictions of a few recent converts to veganism, the atmosphere is positively giddy."
New York Times - Jeannette Catsoulis (05/05/2011)

"[A] richly inspiring and informative documentary....[An] important and heartening documentary."
Los Angeles Times - Kevin Thomas (05/06/2011)

FORKS OVER KNIVES can save your life.

I bought this DVD, FORKS OVER KNIVES, because I am interested in eating as healthy as I possibly can since I am battling both colon and bladder cancers. I have been on a very similar food plan to the one described in this film. I have seen some remarkable changes already. I am no longer on medications for high blood pressure, diabetes, and high colestoral--and all from just changing the types of food I eat. I am hoping that it will also have a positive affect on my cancers--only time will tell. Like they say in the film, this is a film that can save your life. My doctor told me that I would be diabetic for the rest of my life. I proved that type II diabeties can be reversed just by eating the right foods. So can most heart disease. I wish everyone was required to see this film.

I loved this documentary on the vital importance of eating healthy and choosing not to eat meat and stay on a plant based diet.

I believe these guys. I'm changing my diet because of it.

Here's to better health for us all. Long life!

Blessings, Max Rainet.

Forks Over Knives is an excellent DVD that I would strongly recommend to anyone who cares about their (or their loved-one's) health.

Forks Over Knives convincingly makes the case for steering clear or minimizing one's intake of animal foods in general (particularly dairy), and clearly demonstrates the links between animal food intake, obesity, cancer tumor formation, heart disease, diabetes, etc.

Both ironically and originally raised on dairy farms, Dr's Essaylen and Campbell have done years of scientific research and studies which clearly demonstrate the undeniable link between animal foods and disease.

EVERYONE should watch this documentary!! The information is presented in an easy to understand and very interesting format. It explains the research that has been done and shows you the results of adapting a plant-based way of eating when you see actual patients start on that path. You see their blood test results before and after and can see how much healthier and happier they are. After watching Fat, Sick, and Nearly Dead and forks Over Knives, I've been inspired to also transition to a plant-based diet. I can already see the difference in the way I feel. If I do slip and eat something junky, I feel 'junky'. You can't afford not to watch this documentary.

Everybody should see this movie !

Meat and dairy is killing us off, but big meat and dairy has tons of money to spend making us believe we need that stuff. It's just not true.
This movie is hightly informative and inspiring.
