    Santoku Kitchen Knife

    Excellent knife, easy to sharpen and holds an edge well when steeled before usage. However, this is a high carbon steel, not stainless and as such will rust quickly if not dried thoroughly. With reasonable care this knife will provide excellent service.

  • Kitchen Workhorse

    My Santoku is over two years old and it is still used daily. I sharpen it at least twice a year and maintain a 17 degree angle. A patina is developing on the surfaces of the metal to give it an appearance of a work tool (in contrast to the shiny museum pieces it hangs next to on the backsplash). I have needed to epoxy the bolster back onto the wooden handle once, but I am still very pleased with the knife. The length of time it can hold an edge is it's greatest asset in my opinion.
