Cannot cook any Chinese, Japanese or other SE Asian recipes involving these peppercorns and others from Malabar etc.etc. . Like my peppercorns and spices if you ain't noticed are important to me and my cooking. Grind 'em up and add tasting as you go cos you can always add but can't take out. Anyway add, add and then add (bit at a time) until you know exactly wot you want which will give you an idea how much to use with your next catch.
