    Great cookbook

    I have collected a number of Chinese cookbook of the years, but this is probably the best one I've ever bought. I was able to get rid of a few other Chinese cook books, because this is so exhausted. She does not dumb down ingredients, and she has two whole chapters on techniques. It is beautifully put together. Don't expect any photographs, But there are plenty of illustrations.

    As Hollow as a Bottle.

    This a large book said to be the BEST out there by several people who are not Chinese. Yet I found it lacking in many ways in that it has no receipes for such dishes as Egg Foo Young, Pork Fried Rice, Pork Lo Mein, or Moo Goo Gai Pan. There is only scant mention made on two of theses dishes. What a complete waste of my money it was in purchasing it. I've found far better Chineses recipes on the Internet via You Tube. It may be a rare book and long out of print. But I think that is a good thing. Don't waste your time and money seeking a used copy.

    If you could only have one Chinese cookbook this should be it. It covers everything. Very easy to understand instructions. It's not one of those pretty to look at cookbooks with glossy pretty photos. But it's got tons of usable information and recipes. If your serious about learning to cook Chinese food this book is it. I always wanted to know how to get my chicken in stir fries to have the right texture like the restaurants.Mine was always stringy. Not anymore! I learned a technique in this called Velveting. Also my egg drop soup, I couldn't get the soft floating clouds of eggs like they're supposed to be. I can now! The secrete is here in this book & Much much more.....Enjoy

    With the internet full of recipes at your fingertips, I rarely buy actual cookbooks anymore. However, I keep technique books; otherwise, I go online. Kuo's, The Key To Chinese Cooking is a technique book. She will teach you how to cook Chinese food by following along in this book. It is excellent.

  • The only Chinese Cookbook you need!

    Back in college, in the 70's, this was the book that taught me how to cook! I purchased this copy to replace a deteriorating, much-used, and much loved version. The newly purchased book was in excellent condition and should serve me well for the next 30-40 years!
