    Native North American Food and Recipes

    Kalman's work is a mixture of fact and fantasy. Her information is often accurate, but is skimpy: for example, tortilas were made with ash-treated corn, that changed the nutritive value and food properties. That's a critical point. Her recipes are updated and modernized, and hardly in keeping with the historical theme of her book. The three sisters system of agriculture omits the nitrogen fixing property of the beans, which takes the nutrient from the air and deposits it at the roots, fertilizing the corn. Peanuts did not come from the new world, but from Africa. The basket holding corn was decorated inappropriately. Native Americans did not gather potatoes, which originated in Peru.
