About this product

Product Information

Since its original publication, Joy of Cooking has been the most authoritative cookbook in America the one upon which millions of cooks have confidently relied for more than sixty-five years. It's the book your grandmother and mother probably learned to cook from, the book you gave your sister when she got married. This, the first revision in more than twenty years, is better than ever. Here's why: -Every chapter has been rethought with an emphasis on freshness, convenience, and health. -All the recipes have been reconceived and tested with an eye to modern taste, and the cooking knowledge imparted with each subject enriched to the point where everyone from a beginning to an experienced cook will feel completely supported. -The new Joy continues the vision of American cooking that began with the first edition of Joy. It is still the book you can turn to for perfect Beef Wellington and Baked Macaroni and Cheese. It's also the book where you can now find Turkey on the Grill, Spicy Peanut Sesame Noodles, and vegetarian meals. -The new Joy provides more thorough descriptions of ingredients, from the familiar to the most exotic. For instance, almost all the varieties of apples grown domestically are described--the months they become available, how they taste, what they are best used for, and how long they keep. But for the first time Joy features a complete section on fresh and dried chili peppers: how to roast and grill them, how to store them, and how long they keep--with illustrations of each pepper. -An all-new "RULES" section in many chapters gives essential cooking basics at a glance: washing and storing salad greens, selecting a pasta and a matching sauce, determining when a piece of fish is cooked through, stuffing a chicken, and making a perfect souffle. New chapters reflect changing American tastes and lifestyles: -Separate new chapters on grains, beans, and pasta include recipes for grits, polenta, pilafs, risottos, vegetarian chills, bean casseroles, and make-ahead lasagnes. -New baking and dessert chapters promise to enhance Joy of Cooking's reputation as a bible for bakers. Quick and yeast bread recipes range from focaccia, pizza, and sourdoughs to muffins and coffee cakes. Separate chapters cover custards and puddings, pies and tarts, cookies, cakes, cobblers, and other American fruit desserts revived for this edition. Recipes include one-bowl cakes, gingerbread, angel and sponge cakes, meringues, pound cakes, fruitcakes, 6 different kinds of cheesecake--there's even an illustrated wedding cake recipe, which takes you through all the stages from building a stand, making and decorating the cake, to transporting it to the reception without a hitch. -Little Dishes showcases foods from around the world: hummus, baba ghanoush, bruschetta, tacos, empanadas, and fried wontons. -AII new drawings of techniques, ingredients, and equipment, integrated throughout an elegant new design, and over 300 more pages round out the new Joy. Among this book's other unique features: microwave instructions for preparing beans, grains, and vegetables; dozens of new recipes for people who are lactose intolerant and allergic to gluten; expanded ingredients chart now features calories, essential vitamins, and levels of fats and cholesterol. There are ideas for substitutions to lower fat in recipes and reduced-fat recipes in the baking sections. From cover to cover, Joy's chapters have been imbued with the knowledge and passion of America's greatest cooks and cooking teachers. An invaluable combination of

Recipe that my grandmother used to make!

I have been wanting this book for years but finally ordered it since the price was so good. I ordered this for a specific recipe that my grandmother used to make, Russian borscht. My grandmother now has Alzheimer’s so it means so much to me to have this recipe. I looked online but didn’t see any similar borscht recipes to what she made. This book is amazing it has a recipe for anything you could dream up as well as good old fashioned recipes.

  • Every Great Chef/Cook should own one!

I absolutely love this book! I have been a sous chef for several years for my job and my chef and I have grown together with this book. Hes planning to move across the US and is taking his book with him so now it's time to get one of my own. This book explains so much and has made recipes very easy to follow. You know how you read the ingredients and think you know how the recipe is going to go and then later you realize you did it backwards? This book tells you what you need and when to add it and how to do it to make it come out right, it gives you the ingredients to add then the step, then follows with the rest of the ingredients along with the procedure for that. It's so easy to follow and the stories are so unique! The food taste so comforting and relaxing like mom made it! Absolutely ...

  • For anyone - if you're gonna cook, get the JOY!

We got the Joy of Cooking as a wedding present, and recently bought one for a single friend of ours because it's become the Gold Standard of cookbooks for us. It is a cookbook for novices and experts alike - it explains how to boil the perfect egg, tells you how to select good cantaloupes, helps you differentiate between all the leafy greens in the produce section and explains how to cook mustard greens versus chard or collards. Every technique is explained somewhere in easy-to-read terms. The recipes are doable and diverse, from grilling steaks to boeuf bourguignon. There are good vegetarian, ethnic, eclectic, and traditional dishes. The Joy is easy to navigate as a reference tool - the index is great, and each section is laid out in predictable ways, giving background and tips on ...

  • The Cooking Bible in my Pantry

I've had this cookbook since 1998 and use it regularly. Whenever I'm cooking something new, I look here first. The book provides excellent techniques, descriptions, and histories to most dishes. It covers everything from appetizers to main dishes to desserts in great detail. My niece recently stayed with us for about six months. Her family constantly gave her a hard time about her cooking abilities. I gained a whole new respect for this cookbook when I saw how it built up her confidence and her cooking skills in the short time she was with us. Now, whenever she comes over she usually asks if she can bake snickerdoodles and immediately heads for the pantry to get "The Joy of Cooking". I've read that the later edition lost a lot of the cooking lessons that were included in this edition. ...

  • THE ULTIMATE COOKBOOK

I love this book. !!! IF YOU ONLY OWN ONE COOKBOOK, THIS IS THE ONE TO OWN !!! Huge book ... Over a 1000 pages with chapters on every food item you can imagine. Initially authored by Mom, Irma Rombauer, then later revised and kept up to date by her daughter, Marion Rombauer Becker and now by grandson, Ethan Becker. What a testament to good cooking! The authors have even included knowledgeable information for most products used, i.e in the Fruits chapter, the write up on pears indicates the variety of pears that are available, physical description, their traits, when to pick them, how to cook them, store them. Exciting recipees are found with each turn of the page. A handy red satin bookmark embedded in the spine of the book, is also a plus. I have the new version and older version of ...
