A humorous look at the cuisine of our 49th state
LOWBUSH MOOSE (AND OTHER ALASKAN RECIPES) BY GORDON R. NELSON ISBN: 0-88240-112-2 Published in 1978, Softcover I love all things Alaskan! Maybe that’s because I don’t live there (YET!), and haven’t had to experience the severe winters. The allure of Alaska, and all that it promises with recipes is shown in this book written by a former Alaska State Trooper. When I saw this on eBay, I had to add it to my Alaskan collection. Mr. Nelson is a whimsical writer, so even though I may not be able to go to the grocery store and purchase a pound of ground moose meat, I can enjoy his anecdotal style of writing. I was highly entertained by his recollections, and the easy-to-use format of the recipes. As is typical of many of the cookbooks in my personal collection, this is somewhat difficult ... I love when pages lay flat, and I can pop the book into my spatter protection Plexiglas cookbook holder. I was afraid to do this to this volume, for fear of damaging it… Just the way I was raised, I guess, so if that fact doesn’t bother you, you will have no trouble. I just use a roll of nickels to keep it open. So that’s my only gripe. As an armchair future Alaskan chef, I sat warm and snugly reading about food groups I could only imagine. Lowbush Moose is Rabbit, by the way. Highbush Moose is a lot bigger! A sampling from the contents categories is: Clams and Gas Boats Spuds Shrimp and Other Deep Sea Creatures A Couple of Crab Tales The Bread Phenomenon and Sourdough Caribou to You Gunnysack Goose Berries, Bears, and Mushrooms Boat Eggs He’s a pretty funny guy, but don’t let that stop you from getting off your duff, and trying the recipes, ones that you CAN get all the ingredients for. There are plenty of those! And as everyone knows, when you run out of Moose, you can substitute beef. Moose, it's what's for dinner. Let me show you one simple recipe I tried, and remember: these are HIS words, not mine: “Juneau Multi-Bean Salad While I was polishing off a bowl of this salad a woman named Sandy gave me this recipe. Basically all you need is a can opener to make it. Note, however, that it’s a large-family or take-to-a–potluck type of salad. You will need at least 8 good eaters to finish it, or plan on it for two days. 1 16 oz can red kidney beans 1 16 oz can garbanzos 1 16 oz can yellow wax 1 16 oz can green lima beans, large Norfolk beans, if possible 1 16 oz can cut green beans 1 large onion, sliced in rings ½ c cider vinegar ¼ c salad oil ¼ c sugar salt and black pepper Open the cans, drain, and place the vegetables in a large bowl with the onion rings. Stir the vinegar, oil, and sugar together and pour over the beans, carefully mixing everything together until the beans are coated. Salt and pepper to taste. Chill in the refrigerator for at least 2 hours before serving.” (overnight is best!) I have seen this recipe in many books before, but this version has the biggest variety of 3 bean salad ever… choose or leave out what you wish or have on hand. I wanted to give you his sourdough starter recipe, but I am limited on how much I can type here. So my advice is for you to bid on this book, or search the Net, as you won’t find this great book in your local lending library. Nelson entertains as he informs. He’s worth a closer look!
