Synopsis
Cheryl and Bill Jamison's path-breaking Smoke and Spice was the first, and remains by far the best-selling, book on real barbecue - slow-cooking over smoke - for home cooks. This new and expanded edition appears on the twentieth anniversary of the classic book's first edition. It has two key features. First, there are 50 new recipes, including meat dishes, such as Molasses-Brined Pork Butt, Lemon-Coriander Chicken, and Brisket Frito Pie, as well as sauces, sides, and desserts, like Peppery Sweet Onion Sauce, Cornbread Fritters, and Chipotle Cherry Cobbler. Second, it now contains cover- to-cover color photography and page design. The photographs show details of backyard-smoking techniques, delectable views of finished foods from the smoker, and atmospheric shots of barbecue joints and of the legendary pitmasters who cook in them. With 450 recipes from each of the U.S.'s best barbecue regions, each recipe expertly perfected and fine-tuned by the Jamisons, amusing anecdotes and tall tales from the colorful world of 'Q, and take-it-to-the-bank advice on how to use any kind of smoker (as well as how to smoke-cook on a conventional grill), this expanded and richly photographed new edition is certain to usher in a new generation of backyard cooks devoted to real barbecue.

Book is Right On..covering info on smokes, spices, sauces, and styles of cooking

This book is "RIGHT ON". I myself have had over 30 years of experience with meat cutting,BBQ, and smoking (including having gone to a "BBQ college"), and have done some catering. This also includes catering, and cooking with friends that have done BBQ cook-oo competitions, including Memphis in May. The book is easy and enjoyable reading. It provides all type of information on different styles of cooking (BBQ -VS- SMOKING -VS- GRILLING). What uts cook best with each style, and what woods and coals work best with each cut of meat. Also tons of information on BBQ supplies and equipment. AND RECEIPES, for rubs, sauces, marinades, and mops.

  • BEST BBQ BOOK EVER

love this book, I just started making my own true bbq two years ago and had no clue where to start as far as method of cooking and recipes to try, so I started getting books from my local library, I found this one to be one of the most helpful, I loved is so much I had to buy it, it gives a very nice run down on the different types of bbq's available how they are used and what the needed equipment is, every recipe I have tried from this book has been fantastic. This book took a lot of the "scary" out of trying my own bbq i.e. the worry of destroying a $30+ dollar piece of meat. There is a recipe in this book that will make the humble hot dog into a crowd pleaser, when you can do that you know you are really onto something good. I totally recommend this book to anyone wanting to try out ...
