    Simply Necessary for the Serious Cook/Baker

    This is the essential book for anyone who loves to cook/bake! It is a compendium of food facts which tells the "why" we prepare food as it we do, the "how" to do it correctly, and this insight helps us to improve our cooking and baking. The chemistry of food is explained for a non-chemist in easy to understand terms, bringing knowledge which enables the cook/baker to avoid mistakes. While I keep my cookbooks on a shelf and take them out as needed, this book stays in the kitchen... when I have a question, the answer is usually there.
