    Perfect Cakes by Nick Malgieri, Tom Eckerle (2002)

    I received this book with excitement. I started baking right away. So far all the cakes I've made in this book came out extraordinary or shall I say "PERFECT!" People raved as if the cakes I made were from a bakery. I have been looking for a great sponge cake like the ones I've tasted at the Chinese/Korean bakeries, I have found it in this book. The Chiffon cakes texture is so light and airy I feel like i could eat the entire cake. I simply modified it from using a tube pan to two 9 in round cake pans and baking it for 20 mins. I've also made the chocolate devils food cake and many others for my friends. There was no crumb to be found. As far as the directions in the recipe, I have to admit, I am not a beginner so I didn't find it difficult to follow. All the cakes are made from ...

    What can I say, I have never made a recipe from a Nick Malgieri book that was not delicious! His recipes are easy to follow and well written. Highly recommend all his books.
