Great Addition to Our Henckels Knife Set!
We've had a Henckels knife set in the large block for years. Our COVID lockdown and all the resultant cooking motivated me to look to see what else was out there. Not like I really needed another knife, right? But this prep knife caught my eye and I bought it. I was a little anxious about the smaller handle (same size as the paring knives) but that has turned out to be really perfect. I do a lot of mincing with a knife and the smaller handle provides just the right amount of clearance between your fingers and the cutting board when you're doing a rocking mince. Perfect! The other plus is the super thin blade. It's great for slicing. Still use all our other Henckels, but now we have another choice when we approach the knife block. Great in-between size knife
This prep knife is a great in-between knife, for when a paring knife is just too small for food preparation, but when using a full-size chefs knife more than you need -- which describes about 80% of my food preparation. It has the smaller diameter handle of the paring knife -- I would have preferred a larger size handle. The blade edge is nicely curved for rocking motion like a chefs knife, but the curve is more uniform along the full length of the cutting edge, which I found useful. A chefs knife typically rocks only on the curvy part towards the front of the blade, and chops on the back half. This prep knife can rock on any part of the blade. The blade edge comes ground to a sharper angle -- more like a Japanese blade than a European one. Wicked sharp. Very good steel, re-sharpens ... Good Steel, a little small.
GREAT steel in this knife (and all of the Four Star line) - sharpens easily and razor sharp. My only knock on it is that the handles are a little small. dainty, and flimsy. Sometimes hard to hold onto when your hands are wet. But, all in all, great knife.
