    I ran across a very early edition 15 years ago, and it was the most helpful Cookbook ever!!..Recently a friend who is beginning a culinary position was asking some questions..I looked up and found this edition at an unbelievable savings!!...I bought it for her, and she was ecstatic at the wealth of info..in fact, I also bought an upgraded version for myself :)!!!
