The giddy joy that comes with picking up this tribute to outdoor cooking is comparable to the adolescent thrill of sneaking a naughty magazine into the garage. Not only does every conceivable meat, fish and fowl get its turn over the coals, there is a whole Barbecued Cabbage stuffed with bacon and onion and even a grilled Creme Brulee. Raichlen focuses on creative techniques, employing everything from butcher's string and bricks wrapped in foil to inserting a half-full can of beer into the cavity of a chicken: when placed on the grill it simultaneously steams the bird and holds it upright, allowing the skin to grow crisp. Indeed, Raichlen's approach is anything but shy. However, to limit the book to a manageable size, Raichlen presents just one or two recipes for each cut of meat or type of seafood.     Like all cookbooks they are opinions of the people writing them. Steve has some great ideas and methods especially for beginners, even helpful hints for everyone else. However, it isn't a "Bible" there are other ways to get the same or better results. I do recommend the book, but don't forget to experiment and put your own spin on things. Everyone has different tastes for sweet, sour, spice, and heat, no one recipe can cover them all. Take what he gives you and make it yours.

    For gas grillers looking for hints, methods and tips buy something else

    It was written almost entirely geared towards charcoal grilling. It was full of fancy recipes that I would never care to use. Had I had the opportunity to look it over before buying, I never would have wasted even the very small amount for the used book and would have felt cheated if I has paid for a new book.

This is not just a recipe book.... it truly is a book that teaches you step-by-step on how to grill foods that you eat every day. The instructions are easy to follow and they work. You won't need another book to pick-up the missing parts of this book, because there are no missing parts. This book has been a great help to us in learning how to grill.....not burn the food.     The book was really nice, I saw it at a friend home (which I had been borrowing) and had to have my own copy book. With in the book the recipes are easy to use with step by step photo, and I always like to see what it is suppose to look like. At the end of the book there are many interesting recipes for rubs; wet and dry All of which sounded and look very great. If you are amateur or intermediate grillers this book is a great one to have in your cookbook collection.
