Takes forever to register temp
This is the opposite of an instant read. I make cheese and sometimes pasteurize milk, bringing it to 145 degrees. It takes 60-90 seconds as it slowly , 1/10 of a degree at a time finally gets up to 145. Meanwhile your hand is cooking too.
