    Started with moms three-layer antique knife

    My mom had an antique knife that had high carbon steel in the middle sandwich. This one seems to be just as high carbon but it doesn't darken like moms. It stays very sharp and handles nicely. Our son just went off to college and insisted on taking the knife with him so we had to order another one. Then when a daughter visited she also liked it so much she ordered one for herself from the same place! So all together our family has three so far!

    Tojiro DP VG10 Japanese Gyuto Chef Knife (F-302)

    Lightweight, very sharp, and a great price. The size is good without being a large chef's knife. Be careful washing the blade edge because it slices through my sponges!
