Straight forward, easy to understand, and directions are simple to execute. Pictures and explanations are spot on. It takes you from the basic foundational elements of making dumplings to some fairly advanced (yet surprisingly executable) techniques.
I've been making dumplings for over 30 years - and definitely learned more than a few "tricks of the trade" from this source.
Definitely opened my eyes to dumplings beyond the savory. While "sweet" is not my favorite, it definitely has a place at the table.
This book opens your eyes to a much wider palate than what people have typically and previously enjoyed. Some of the techniques are directly transferable to making other dough-wrapped goodness - ravioli, pirogi, samosa, empanada, pelmeni, etc.
And then, there's the sauces. We have our traditional favorites - and have definitely added several to that list directly from this book.
