Going digital makes home canning simpler/easier.

I have been using stove top pressure canners for a few years and now have two digital canners, a Carey and now this Presto. I have used both twice for pressure canning and they are similar, I suppose I especially like the Presto because it does hold a little more, five quarts opposed to four. The Presto is nice that the digital read out tells you just what it is doing. It comes with a one page 'cheat sheet' so instructions are easy to follow and you know what is coming up next. I very much like that these digital canners do not heat up the kitchen so much and there is much less steam coming out of them so my windows are not steamed up when using them in the winter. Two great advantages of these canners is that you do not have to worry about them boiling dry, and after the ten minutes of venting, you can walk away and do what you want, the canner finishes, turns off, and you unplug them, let them cool, unload them, do a little clean up, and that's it. The Presto is a bit bulky, I only have one shelf in a closet where it fits, it's just a bit over 15" tall, but it stores fine once I made a designated spot for it. I'm an old guy who's been canning since I was a boy. I remember helping my Grandmother, my Mom, my wife, and now I'm on my own. I'm not a 'newbie' to pressure canning. This digital electric pressure canner is an absolute game changer. Why? As an official 'old guy' I sometimes tend to doze off a little in my chair in the evenings. Needing to constantly monitor and regulate the flame under my big canners seemed a little risky to me sometimes. I like to process a canner batch in the evenings. Now, all I need to do is get everything ready, and when it tells me to put on the weight, I can go away with total confidence. The canner takes over from there. Perfect! Just the safety and the convenience are enough for me to recommend this. I still have my big canners, and when the garden is producing like crazy (right now!) I still use them for bigger batches.
